The quest for that answer led me to Chef Quentin Garcia, who left successful restaurants in Napa to open a fine dining restaurant in Merced, California. His restaurant is literally the only fine dining restaurant in the area and today we sat down to discuss how his big city cuisine is faring in a small town.
