The Perfect Check
Definition by Josh Kopel · Last updated October 2026
The Perfect Check is the per-guest spend your best and most frequent guests already reach; raise every guest toward it and small gains compound fast, with one independent restaurant adding $1.18 per guest and banking more than $150,000 in a year (client-reported). It is the central metric of Josh Kopel’s Restaurant Scaling System. The unit of analysis is the check, not top-line sales.
How the Perfect Check works
- Find it in your own data. Your ideal check already exists: it is what your biggest spenders who visit most often already order. Pull it from your POS.
- Compute the gap on flat covers. How much more does each guest need to spend to hit your target, and what does that look like on the plate?
- Find the server already selling it. Capture their language and teach it to the whole team.
- Show servers their own math. They won’t sell more for you, but they will sell more for themselves when the tip math is spelled out.
- Let the menu do the heavy lifting. Engineer what gets attached to each order (one hero per gap: non-alcoholic drink, starter, upgrade, dessert) so servers guide rather than sell.
What it’s worth
On flat covers, +$1.18 per guest produced $150K+ in a year, and +$3 per guest in 30 days annualized to over $290K (client-reported results from Josh’s coaching practice). No new customers, no new hours, no ad spend.
